Simple Grain-Free + Sugar-Free Granola


1 cup unsweetened shredded coconut
1/2 cup flaxseed meal
1/2 cup walnuts, chopped
1/4 cup pumpkin seeds
1/4 cup sesame seeds
1/8 cup chia seeds
1/2 cup melted coconut oil
Add flavour using your preference of spices ... cacao, turmeric, cinnamon, ginger, cardamom, etc. 

Preheat oven to 230F / 110C.
Mix coconut, nuts and seeds together is a large roasting pan. Drizzle melted coconut oil and toss well, ensuring everything is nicely coated. Add desired spices and mix again.
Bake for about 45 minutes, mixing every 5-10 minutes to ensure it doesn't burn. Turn off the oven after the mixture is nicely roasted and allow to cool. 
Store in an airtight container and enjoy over oatmeal and yogurt or as cereal with some nut mylk and berries.
